Beef with broccoli

Beef with broccoli is the weeknight stir-fry that comes together in 20 minutes and tastes even better than takeout. Tender strips of beef, crisp broccoli florets, and a savory-slightly-sweet sauce mean everyone at the table is happy—and there are no delivery fees.
Ingredients
- 1.5 lbsbeef sirloin or flank steak
- 6 cupsbroccoli florets
- 3 tbspsoy sauce
- 1 tbsprice vinegar
- 1 tbsphoney or brown sugar
- 3garlic cloves, minced
- 1 tbspfresh ginger, minced
- 3 tbspvegetable oil
- 1 tbspcornstarch
- 1/4 cupwater or beef broth
- 1 tspsesame oil
- 1/4 tspred pepper flakes (optional)

Slice beef thinly against the grain. Toss with 1 tbsp soy sauce and the cornstarch; let sit while you prep everything else.

Whisk together remaining soy sauce, rice vinegar, honey, water, and sesame oil in a small bowl; set aside.

Heat 1 tbsp oil in a large skillet or wok over high heat until smoking. Working in batches, sear beef for 1–2 minutes per side until browned. Transfer to a plate.

Add remaining 2 tbsp oil to the pan. Add broccoli and cook, stirring often, until tender-crisp and lightly charred, about 5–6 minutes. Add a splash of water if it sticks.

Stir in garlic and ginger; cook for 30 seconds until fragrant.

Return beef to the pan along with the sauce. Toss everything together and cook for 1–2 minutes until sauce thickens and coats the beef.

Taste and adjust seasoning. Serve over rice with extra sauce and a sprinkle of sesame seeds if you like.
