Ingredients

Method

  1. 1

Dice the potatoes into ½-inch pieces. Cut bacon into 1-inch pieces and cook in a large 12-inch skillet over medium-high heat until crispy, about 8 minutes. Transfer to a plate, leaving 2 tablespoons of bacon fat in the pan.

  2. 2

Add potatoes to the skillet and cook without stirring for 5 minutes to get them golden, then stir and cook another 8–10 minutes until tender and browned.

  3. 3

Dice the onion and bell pepper. Push potatoes to the side, add onion and pepper to the empty space, and cook 4 minutes until softened. Stir in minced garlic and cook 1 minute.

  4. 4

Return bacon to the skillet and scatter cheese over everything. Make 8 wells in the mixture and crack an egg into each one. Cover the skillet with a lid or foil.

  5. 5

Cook over medium heat for 8–10 minutes, until egg whites are set but yolks are still runny (or longer if you prefer firmer yolks).

  6. 6

Sprinkle with fresh chives, salt, and pepper. Serve straight from the skillet.
