
Breakfast skillet

A hearty skillet loaded with crispy potatoes, eggs, and whatever breakfast meat you've got on hand—this is the kind of dish that gets everyone to the table on a busy morning. It comes together in one pan and tastes like someone actually cared about breakfast.
Ingredients

- 6 slicesbacon
- 1onion
- 1bell pepper
- 8eggs
- 1 cupsharp cheddar cheese
- 2garlic cloves
- 1 tspsalt
- 0.5 tspblack pepper
- 2 tbspfresh chives

Dice the potatoes into ½-inch pieces. Cut bacon into 1-inch pieces and cook in a large 12-inch skillet over medium-high heat until crispy, about 8 minutes. Transfer to a plate, leaving 2 tablespoons of bacon fat in the pan.

Add potatoes to the skillet and cook without stirring for 5 minutes to get them golden, then stir and cook another 8–10 minutes until tender and browned.

Dice the onion and bell pepper. Push potatoes to the side, add onion and pepper to the empty space, and cook 4 minutes until softened. Stir in minced garlic and cook 1 minute.

Return bacon to the skillet and scatter cheese over everything. Make 8 wells in the mixture and crack an egg into each one. Cover the skillet with a lid or foil.
