Brussels salad with burgers

Crispy homemade burgers piled on a bed of warm roasted Brussels sprouts and tender greens—it's comfort food that actually feels fresh. The caramelized sprouts give you something a little fancy without any fuss, and it keeps everything on one plate.
Ingredients

- 1.5 lbBrussels sprouts
- 6 cupsmixed greens
- 3 tbspolive oil
- salt and pepper

- 4 slicescheddar cheese
- 1red onion
- 3 tbspshallot vinaigrette or mustard
- 1 tbspbutter

Preheat oven to 425°F (220°C). Trim and halve the Brussels sprouts, toss with 2 tbsp olive oil, salt, and pepper. Spread on a sheet pan and roast until golden and crispy, stirring halfway through.

While sprouts roast, gently form ground beef into 4 patties about ¾ inch thick. Make a small thumbprint in the center of each (this keeps them from puffing). Season generously with salt and pepper just before cooking.

Heat 1 tbsp olive oil in a cast-iron skillet or griddle over medium-high heat. Cook burgers 3–4 minutes per side for medium doneness. Top each with cheese in the last minute and cover to melt.

Toast buns lightly in a dry pan or under the broiler if you like them warm.

Toss mixed greens with vinaigrette. Divide among serving plates or a large platter.
