Chicken Brie apple paninis

Warm, crispy paninis with melted brie, tender chicken, and sweet apple slices—it's the kind of sandwich that feels fancy but comes together in minutes on a weeknight. Kids and adults alike line up for these, and they're perfect for using up rotisserie chicken or leftovers.
Ingredients
- 2 cups shreddedrotisserie chicken or cooked chicken breast
- 8 ozbrie cheese
- 2 mediumapples
- 4panini or ciabatta rolls
- 2 tbspbutter
- 2 tbspwhole grain mustard
- 1 cup packedfresh spinach or arugula
- to tastesalt and pepper

Slice your apples into thin rounds and toss lightly with a squeeze of lemon juice so they don't brown.

Cut the panini rolls in half horizontally. Spread mustard on the inside of each bottom half.

Layer the chicken on the mustard, then add a handful of spinach, apple slices, and thin slices of brie on each sandwich. Season with a pinch of salt and pepper, then close with the top half.

Heat a skillet or panini press over medium heat. Butter the outside of each sandwich generously.

Cook the sandwiches, pressing gently, until golden brown and the cheese melts, about 4–5 minutes per side if using a skillet, or 4–6 minutes total in a panini press.
