Chicken burrito bowls

Build-your-own burrito bowls are a weeknight lifesaver—seasoned chicken, rice, beans, and all your favorite toppings in one forgiving, customizable dish. Everyone gets exactly what they want, and cleanup is minimal.
Ingredients

- 2 tbspolive oil
- 1.5 tspcumin
- 1 tspchili powder
- 3garlic cloves minced
- 2 tbsplime juice
- to tastesalt and black pepper
- 2 cupscooked rice white or brown
- 1 cancanned black beans drained
- 1 cupcorn fresh or frozen
- 1 cupshredded cheddar cheese
- ¾ cupsalsa

Pat chicken breasts dry and slice into bite-sized pieces. Heat olive oil in a large skillet over medium-high heat.

Add chicken and cook until just starting to brown, about 3–4 minutes. Add minced garlic, cumin, chili powder, salt, and pepper.

Stir well and continue cooking until chicken is cooked through, about 5–6 minutes more. Squeeze lime juice over and taste for seasoning.

While chicken cooks, warm the black beans and corn together in a small saucepan over medium heat.

Divide cooked rice among four bowls. Top each with seasoned chicken, warm beans and corn, a handful of shredded cheese, and a spoonful of salsa.
