Chicken parm burgers

Crispy chicken cutlets topped with melty mozzarella and marinara, tucked into a soft bun—it's chicken parm without the fussy plating. Your kids will devour these, and you'll love that they're faster than the restaurant version.
Ingredients
- 4boneless skinless chicken breasts
- 1 cupall-purpose flour
- 2eggs
- 1.5 cupspanko breadcrumbs
- 0.5 cupparmesan cheese grated
- 1.5 cupsmarinara sauce
- 4 slicesfresh mozzarella
- 3 tbspvegetable oil
- to tastesalt and black pepper
- 4hamburger buns
- 4 leavesfresh basil

Place each chicken breast between two sheets of plastic wrap and pound gently until about ½ inch thick.

Set up three shallow bowls: one with flour, one with beaten eggs, and one with panko mixed with parmesan and a pinch of salt and pepper.

Coat each chicken breast in flour, shaking off excess, then dip in egg, then coat thoroughly with panko mixture.

Heat oil in a large skillet over medium-high heat. Fry chicken 4–5 minutes per side until golden and cooked through.

Top each cutlet with a spoonful of marinara and a slice of mozzarella. Cover the pan and cook until cheese melts, about 1 minute.
