Goat cheese and apple salad

Sweet apples, tangy goat cheese, and peppery arugula come together in this easy salad that feels fancy but takes just 10 minutes to pull together. It's light enough for lunch but substantial enough to serve alongside roasted chicken or grilled fish for dinner.
Ingredients
- 5 cupsmixed salad greens or arugula
- 2crisp apples (Granny Smith or Honeycrisp)
- 4 ozgoat cheese, crumbled
- 1/2 cupwalnuts or almonds, toasted and chopped
- 1/4red onion, thinly sliced
- 3 tbspolive oil
- 1 tbspapple cider vinegar or red wine vinegar
- 1/2 tspDijon mustard
- 1/2 tsphoney

In a small bowl, whisk together olive oil, vinegar, mustard, and honey. Season with a pinch of salt and pepper. Set aside.

Core the apples and thinly slice them (no need to peel). Toss with a squeeze of lemon or a splash of vinegar to prevent browning.

Place greens in a large bowl and add the sliced red onion. Pour the dressing over and toss gently to coat.

Divide the dressed greens among four plates. Top each with sliced apples, crumbled goat cheese, and toasted nuts.
