Greek chicken bowls / plates

These colorful Greek chicken bowls come together in about 30 minutes and feed a crowd without fuss—perfect for busy weeknights when you want something bright and satisfying. Seasoned chicken sits over crisp vegetables, creamy tzatziki, and feta, so everyone builds their own plate exactly how they like it.
Ingredients
- 1.5 lbchicken breasts
- 3 tbspolive oil
- 1lemon
- 2 tspdried oregano
- 3garlic cloves

- 1cucumber
- 2 cupscherry tomatoes
- 1/2red onion
- 1 cupfeta cheese
- 1 cuptzatziki sauce
- 2 cupscooked rice or quinoa

Mince garlic and whisk together with 2 tbsp olive oil, juice of half the lemon, oregano, salt, and pepper in a bowl.

Pound chicken breasts to even thickness, then coat with the marinade and let sit for 10 minutes (or longer if you have time).

Heat remaining 1 tbsp oil in a large skillet over medium-high heat. Cook chicken 6–7 minutes per side until golden and cooked through.

While chicken cooks, chop cucumber, halve tomatoes, and thinly slice red onion. Squeeze remaining lemon juice over vegetables.

Slice rested chicken and divide rice among four bowls.
