Kale Caesar salad

Hearty kale holds up beautifully to a creamy, garlicky Caesar dressing, making this salad feel more like a meal than a side. It's quick enough for weeknight dinner but fancy enough to serve when friends drop by.
Ingredients
- 8 cupsfresh kale, chopped
- ½ cupparmesan cheese, freshly grated
- 2garlic cloves
- 2anchovy fillets
- 3 tbspfresh lemon juice
- 1 tspDijon mustard
- ½ cupolive oil
- salt and black pepper
- 1 cupwhole grain crackers or croutons

Mince garlic and anchovies together into a paste, then whisk with lemon juice and mustard in a small bowl.

Slowly drizzle in olive oil while whisking constantly until the dressing emulsifies and thickens slightly.

Taste and season with salt and pepper (go easy on salt—the anchovies and cheese add plenty).

Place chopped kale in a large bowl and pour dressing over it. Using your hands, massage the kale for 1–2 minutes until it softens and turns darker green.

Toss in most of the parmesan, reserving some for garnish. Add crackers or croutons and toss gently.
