Meatloaf with mashed potatoes

- 1 cupbreadcrumbs

- 1 mediumonion, finely diced
- 1/2 cupketchup
- 2 tbspWorcestershire sauce
- 1 tsp eachsalt and pepper
- 2.5 lbsrusset potatoes
- 4 tbspbutter
- 1/2 cupwhole milk
- 2garlic cloves, minced

Preheat oven to 350°F (175°C). Line a 9x5-inch loaf pan with foil or lightly grease it.

In a large bowl, combine ground beef, breadcrumbs, eggs, diced onion, 1/4 cup ketchup, Worcestershire sauce, salt, and pepper. Mix gently with your hands until just combined—don't overmix or the meatloaf will be dense.

Press the mixture into the loaf pan. Spread the remaining 1/4 cup ketchup over the top. Bake for 50–55 minutes, until an instant-read thermometer reaches 160°F.

While the meatloaf bakes, peel potatoes and cut them into 2-inch chunks. Place in a pot of cold salted water and bring to a boil.

Boil potatoes for 12–15 minutes until fork-tender, then drain well.

Return potatoes to the pot. Add butter, minced garlic, and milk. Mash until creamy, adding more milk if needed. Season with salt and pepper to taste.
