Quesadillas (various)

Quesadillas are the answer to the question "what's for dinner?" — quick, satisfying, and endlessly customizable with whatever cheese and fillings you have on hand. Kids love them, they come together in minutes, and they're perfect for lunch, dinner, or even a casual gathering.
Ingredients
- 8flour tortillas
- 2 cupsshredded Oaxaca or mozzarella cheese
- 1.5 cupscooked shredded chicken or ground beef
- 1diced poblano or bell pepper
- 0.5diced red onion
- 0.25 cupfresh cilantro leaves
- 3 tbspbutter or oil
- to tastesalt and pepper

Have all your fillings prepped and ready: cheese shredded, meat cooked, vegetables chopped, cilantro picked.

Heat a large skillet or griddle over medium-high heat. Lightly butter one side of a tortilla and place it butter-side down on the hot surface.

Scatter a handful of cheese on half of the tortilla, then add your desired fillings — meat, peppers, onion, cilantro — and more cheese on top. Fold the tortilla in half.

Cook until the bottom is golden and crispy, about 2–3 minutes. Gently flip and cook the other side until golden and the cheese is melted throughout.

Transfer to a cutting board and repeat with remaining tortillas. Serve warm with sour cream, salsa, guacamole, or jalapeños on the side.
