
Salmon with lemon and green beans

Salmon fillets pan-seared until crispy, then finished with fresh lemon and tender green beans—it's elegant enough for company but simple enough for a Tuesday night. This dish comes together in under 30 minutes and tastes like you spent way more effort than you actually did.

- 1.5 lbsfresh green beans
- 3 tbspolive oil
- 2lemon
- 3garlic cloves
- 2 tbspbutter
- 1 tspsalt
- 0.5 tspblack pepper
- 2 tbspfresh dill (optional)

Trim the green beans and toss with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast at 400°F while you cook the salmon.

Pat the salmon dry and season both sides with salt and pepper. Mince the garlic and zest one lemon.

Heat 2 tbsp olive oil in a large skillet over medium-high heat. Once shimmering, place salmon skin-side up and cook without moving for 5-6 minutes until the skin is crispy and golden.
