Sausage potato soup

Ingredients
- 1 lbground sausage (Italian or breakfast style)
- 1 tbspolive oil
- 1 mediumonion, diced
- 2 stalkscelery, chopped
- 3garlic cloves, minced
- 1.5 lbsrusset potatoes, cubed
- 6 cupschicken broth
- 1 can (14 oz)diced tomatoes (canned)
- 2 cupskale or spinach, chopped
- to tastesalt and black pepper
- 1/4 tspred pepper flakes (optional)

Heat olive oil in a large pot over medium-high heat. Add the sausage and cook, breaking it up with a spoon as it browns, until no pink remains.

Add the diced onion and celery to the pot. Stir and cook until softened, about 3–4 minutes.
