Sausage tortellini

Ingredients

- 3garlic cloves
- 6 cupschicken broth
- 1 can (14 oz)diced tomatoes
- 1 lbfresh tortellini
- 2 cupsfresh spinach
- ½ cupparmesan cheese

- ¼ tspred pepper flakes

Remove sausage from casing and crumble into a large pot over medium-high heat. Cook until browned, breaking it apart as it cooks, about 5–6 minutes. Transfer to a plate.

Reduce heat to medium. Add olive oil, diced onion, and minced garlic to the same pot. Sauté until softened and fragrant, about 3 minutes.

Pour in broth and canned tomatoes with their juices. Return the sausage to the pot and bring to a simmer.
