Tomato soup and grilled cheese

- 28 ozcanned crushed tomatoes
- 2 cupschicken or vegetable broth
- ½ cupheavy cream

- 8 ozsharp cheddar cheese

Melt 2 tablespoons of butter in a large pot over medium heat. Dice the onion and sauté until softened, about 5 minutes. Add minced garlic and cook for 1 minute more.

Pour in the crushed tomatoes and broth. Bring to a simmer and let cook for 10 minutes to blend flavors.

Stir in the heavy cream and season with salt and pepper to taste. Keep the soup warm on low heat while you make the sandwiches.

Butter one side of each bread slice generously. Heat a large skillet over medium heat. Place one slice buttered-side down, top with 1 ounce of cheese, then another slice buttered-side up.
