Turkey Melts

Turkey melts are the ultimate quick lunch or casual dinner—crispy bread, tender sliced turkey, melted cheese, and a little tomato and lettuce if you're feeling it. They're so easy to throw together that you'll find yourself making them on busy weeknights, and somehow everyone at the table ends up happy.
Ingredients
- 1 lbsliced turkey breast
- 8bread slices (white, wheat, or sourdough)
- 8cheese slices (cheddar, Swiss, or provolone)
- 2 medium tomatoestomato slices
- 8lettuce leaves
- 4 tbspmayonnaise or mustard
- 3 tbspbutter

Butter one side of each bread slice generously.

Lay 4 slices butter-side down on a cutting board. Spread the other side lightly with mayo or mustard, then layer with turkey, tomato, lettuce, and a cheese slice on each.

Top each sandwich with the remaining bread slice, butter-side facing out.

Heat a large skillet or griddle over medium heat. Working in batches if needed, cook the sandwiches for 3–4 minutes per side until the bread is golden brown and the cheese is melted.
